    Ingredients

    1. 1 tbsp Olive Oil
    2. 1 sliced Leek
    3. 110g Chorizo
    4. 1 teaspoon Turmeric
    5. 300g Rice
    6. 1 L Fish Stock
    7. 200g Peas
    8. 400g Frozen Seafood mix

    How to prepare

    step 1 Heat the oil in a deep frying pan, then soften the leek for 5 mins without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally. step 2 Tip in the peas and cook for 5 mins, then stir in the seafood to heat through for a final 1-2 mins cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.

    1. 1 tblsp Olive Oil
    2. 1 chopped Onion
    3. 1 Red Pepper
    4. 1 Yellow Pepper
    5. 2 sliced Garlic Clove
    6. 250g Paella Rice
    7. 800ml Vegetable Stock
    8. Pinch Saffron
    9. 400g Frozen Seafood mix
    10. Juice of 1/2 Lemon
    11. Handful Parsley

    How to prepare

    step 1 Heat the oil in a large saucepan and soften the onion for 6-7 mins. Add the pepper and garlic, cook for 2 mins more, then stir in the paella rice and cook for 1 min, stirring to coat. step 2 Pour in the stock, add the saffron and bring to the boil. Cook, uncovered, at a gentle bubble, for 20 mins, stirring occasionally until the rice is tender. step 3 Stir in the seafood and lemon juice and cook for 2 mins or until piping hot and completely cooked through. Serve in warm bowls scattered with the parsley.
